Gastronorm Sizes & Materials
Gastronorm sizes were established by the European Standards Committee to standardise container sizes in the catering industry.
These European standard sizes are stated as GN sizes. Sizes that conform to the EU Standard EN631 are listed below, the proportions chart shows a visual reference of the scale between the gastronorm pans.
There are 9 different sizes, the dimensions are of the outer of the container.
GN containers are available in a number of depths, so they can be used in various different pieces of equipment.

Various materials are available, generally these are stainless steel, polycarbonate, melamine, polypropylene and porcelain.
Stainless steel gastronorm pans are usually used for cooking, keeping food warm and chilling. They are also often seen used to keep food warm in a buffet display, or as a bain marie.
Polycarbonate and polypropylene containers are often used for keeping foods refrigerated, or in a buffet display setting.
Melamine containers are made from a strong, lightweight, hard thermosetting plastic. They are durable, strong and available in different colours. They are not suitable for use in the oven.
Porcelain gastronorm dishes are suitable for hot or cold food preparation, storage and presentation in buffet displays or as an alternative to stainless steel pans. They are strong and are oven, microwave, freezer and dishwasher proof.
